  This summer at Luna Farms, we're getting our land and soil in shape with the help of our organic farmer Alex McCracken. To prepare for a bountiful 2012, we'll spread clover and buckwheat cover crops to enrich the dirt and elevate its fertility. In the fall, we'll begin planting seeds to yield beets, scallions, bok choy, carrots, swiss chard, spinach, arugula, lettuces and salad greens, radishes, daikon, sugar snap peas, turnips, garlic, sunchokes and a few herbs. We'll also build a few hoop greenhouses and construct a new barn for our equipment, such as our tractor that runs on biodiesel fuel converted from used fryer oil discarded by Garces Restaurant Group locations. A butchering room, canning facility and cheese-making room will also be built so that we may turn our great harvests into other great products.
